I have heard of people boiling ribs for a while in shrimp boil seasoning. Then take them out and finish them on the grill. I have never tried that, but it might be good.

I no longer smoke. I simply put them in a cooking bag with liquid smoke and stick them in the oven for about five hours.

Try rubbing with chipotle purée before using a darkbrown sugar / SPG rub. Then smoke several hours and wrap them up in foil to finish in warm oven for a few hours. Tender tasty ribs.

The wife and I like sweet ribs and a while back, a buddy turned me onto Harley's Rib Rub. I coat my ribs pretty generously with it and then add some dark brown sugar. Smoke the ribs for 3 hours spritzing with apple juice every hour, wrap in foil with apple juice and put back on the pit for another 2 hours. Pull out of foil, put back on pit while mopping the ribs with Head Country bbq sauce a few times and once it caramelizes, it's ready to be pulled off.

The chipotle purée/DBS/SPG turns into a BBQ flavored glaze on the ribs. Plus the drippings from the oven finish will reduce nicely into a table sauce.
Bottom line is what Bill says, never had a bad one.

Traditionalists...look away now! Ok...I rubbed my normal bbq magic dust on st.louis ribs...then put 2 1/2 cups of beef stock and quartered white onion in my electric pressure cooker...put halved ribs on trivet in the pc...did pc high pressure for 35 minutes...removed after natural pressure release and placed ribs on rectangular cake pan....coated both sides of ribs with favorite bbq sauce and baked in preheated oven 10 minutes per side...let cool a bit and plated with mustard sweet pickle tater salad and red beans with white bread and onion slices. So-oh good!

I tried that once with ribs and chicken and didn't care for it. If you're still wanting to try something different try deep frying the ribs (I've only fried feral pork ribs). Cut up your ribs, drop into hot oil (350-375), fry until nice and crisp, remove and season immediately with whatever you like (like you do cracklins). I like em'.

why wrap ribs in foil lol I wrapped mine with apple juice in the bottom to help moisten them back up. My old pit was a bear to keep a constant heat due to the holes in the firebox. So many times it would get too hot and dry them out. Gotta work with what ya got. Shouldn't have that problem now with the new pit.

I just keep it simple - put your favorite rub and let sit for 2 hours. Cold smoke for 2 hours. Wrap in plastic and the foil, and cook at 225 for 5 hours. If you like a glaze, then sauce and put on the grill while still warm. Boiling is actually a great process and reduces the cook time, but you might lose some flavor.
