i have had deer several difft ways from several difft people. any way to not make it taste like poop?

Was the meat tken care of after the shot. If it is allowed to get to hot it will spoil the meat. I am sure that you already know this but I thought I would mention it anyways. I posted a recipe for venison backstrap that is awsome. It is located in the other ways to cook backstrap thread. If you don't like this then you might not like venison at all. If yu send me an extra backstrap I will test it for you to make sure that it is edible!!

Like bowhunter said, tenderize it and chichen fry it. It will never like a good ribeye from aged beef. If it was there wouldn't be any deer left to hunt.

If it is too strong for you try soaking it in salt water in the refrigerator. The salt draws out the blood, which is where some of the strong gamy taste comes from.
I do this for ducks and doves. I usually soak them a couple of days. I will change the salt water about twice a day over the two days. You will be surprised how much bloody water you pour out, especially the first couple of times.

crockpot is always good. Soak it in milk before you cook it for about an hour.

You know I read these different posts on how to get this flavor out, do this, do that---it's wild game for heaven sake!!!! It's supposed to have a "different taste" That's just the way it is. Yes, it has the be prepared right--all the way from field dressing right up to the table, and I bet there is only a handfull of guys that can do it right. Even then---whether it's ducks, dove, or deer, I'm looking for that special taste. If I wanted a steak--I would just go buy one at Sams. And just like cattle--if you want good deer meat-shoot a doe. A bull is never great meat. Good luck.

I'm not sure where ya'll get your meat or how you take care of it after you shoot it but I love the taste of deer.
Normally it's shoot, gut, skin, quarter, and on ice within 1 hour of the shot. Drain the water and replace ice until you get to processing it. I've never had to soak my deer in anything after it's processed, except buttermilk and seasoned flour, and thats right before it hits the grease.

its funny everybody says im not sure of how you take care of the meet after you cook it, but i dont let it sit. i gut it where it lies quarter and then put on ice. nothing to it. still taste like dookie. taste like dookie fried, taste like dookie grilled, taste less like dookie made into barbecue and chili but still a hint of dookie.

There is not much better than a deer roast done right. My brother in law used to say it tasted bad and he never liked it until he tried mine. Now he can hold his own in the kitchen with deer as a main course and many other variations of game.
It's lean, not like pork. If you like lean meat, there is no reason you shouldn't like deer. You just haven't had it prepared right.

Who is processing your deer? If its not processed correctly it will always have a wild taste. I have had very few deer that taste bad. If it has a gamey taste, soak it in cold salt water to bring the bloode out. Try cutting the steaks in chunks put on a tooth pick marinate in italian dressing up to 24 hrs (will tenderize meet) bbq until bacon is done (do not over cook) if this taste bad to you then I would say something is wrong with the meet. I fix it this way and people who dont like vinison eat it just fine. People who dont eat vinison regularly cant tell the difference. Ive never had anyone say this taste bad. Most people dont know what it is. Someone usually has to tell them what it is. I have fun cooking for people who say they dont like it because they are going to get some cooked for them with out them knowing what it is and they eat it just fine.

Agreed..........I cooked fajitas for a bunch of my liberal church members half beef and half venison. The wife told me it was a bad idea. Marinated them both in Italian dressing, cooked them up and sat them out in two seperate dishes. Venison was gone first. It wasn't till after dinner someone was asking for the recipe, and going on and on about the taste that I let the cat out of the bag. No one spewed and everyone was surprised. Some even asked to take some of the venison home.

maybe you just dont like it. i have hunted for 40 years and am not that big a fan of deer meat. chicken fried is ok, but it is still deer meat. bring on the beef for me as well.

x2 tasted better when you dont eat the poop. Try some backstrap might taste a little better. On the serious side like TxBowhunter said tenderize the heck out of it and you might try soaking it in milk if it is the gamey taste you dont like.

I make deer burgers, spaghetti, and chili...it all tastes great to me!!! My wife can't even tell a difference. I love it fried with biscuits and gravy...nothing better in the world to me.
You need to come and let my granddad cook you some backstrap and biscuits and gravy for breakfast one day and I promise you it wont tase like dookie

You like fine cattle steak? Overcook it almost to being burned up and guess what-it taste will be like a fine piece of leather. I can barely eat it. It should be cooked medium rare or rare. Over cook a fine piece of red snapper and it's going to be very much like a sponge. Over cook shrimp and it taste exactly like a rubber band. Get the point?

I have seldom found that venison equals good beef. I guess some people prefer it and I suppose there are some pretty good recipes. I shot a huge old buck this year and had it ground into hamburger meat. I use it in chili, spaghetti, enchiladas and other stuff that takes a lot of spices.
Sine I never eat bloody meat, I'll probably never acquire a taste for it.
I also don't eat feral pig. Really good ham is too cheap.
Without a sense of urgency, nothing ever happens.

jerky, sausage, and back straps and tender loin cooked like a steak!!!!!!! how i do all my deer. mostly jerky, i just cant get enough of deer jerky, IMO deer jerky 100 times better than beef jerky, deer hamburger, 100 times worse than a beef patty lol!

To do the same comparsion; Deer- old monster buck beef-should be and old bull!.....and actually your eating a beef cow that's 1-2 years old and if it was a male younger and guilded(balls removed) plus was aged in a coller at 34-40 deg ( so don't freeze but aged). Not to mention a beef cow breed for eating ,there is a difference between meat cow and a milking cow.

ya i know we have about 150 head of beef cattle...been raising cattle with my grandpa since i was born, i just didnt understand ur comment. but i get what u are saying now. Ya bull is not good, if we have to kill one of our old bulls, we bury it, cant wait till we butcher one of he steers weve been raisin on feed for the past few months, ill actually have some meat in my apt., i dont thinkhe will make any good steaks though..ooo and u do eat milk cow all the time, most old dairy cows and dairy cow bull calves are put into almost all of ur burgers.

I worked on a dairy farm, the ones we ate were calves that were fed half&half (half milk & half water) and they were kept on a leash (tied up in the barn).

theirs a few good ways but last weekend my buddy wrapped a full backstrap in onion theen wrapped it in bacon put it in tin foil with a beer and a little allegros and some jalapenos it only lasted about thirty seconds when it came off the grill

You're not using an old toilet for a BBQ pit are you???? I once cooked it for about 30 people that said, "EWE I DON'T LIKE DEER MEAT!" I told them just TRY it. They couldn't get enough and I couldn't cook it fast enough. There were maybe 3 people that still said they didn't like it. I cut it in pieces about the size of your thumb, roll it in flour, salt and black pepper mixture and fry it just until it turns golden brown ( probably about 3 mins) If you don't like it this way, sell me all your hunting stuff and give up!

Been living on probably 80-90% venison my entire life and never a complaint. Ive eaten dang near any way you could think of some come out better than others and some care needs to be taken because its not a piece of marbled beef, but its dang good eating.

yep, I was raised on things we killed about 95% of all the meat we consumed till I was 18 years old. About the only way I didn't care for venison was when my mom would make a shoulder roast in the oven (baked a whole shoulder on large cookie sheet), came out with a unique flavor (cross between dove & liver, which I like both) I didn't care much for it that way but still ate it ...

I'm not sure where ya'll get your meat or how you take care of it after you shoot it but I love the taste of deer.
Normally it's shoot, gut, skin, quarter, and on ice within 1 hour of the shot. Drain the water and replace ice until you get to processing it. I've never had to soak my deer in anything after it's processed, except buttermilk and seasoned flour, and thats right before it hits the grease. Same way we do all our deer, never had any problem. Only difference is, I don't gut a deer, haven't in yrs. Just hang up by hind legs, skin. Take off front quarters, and back straps. Gently work the bung and all down into rib cavity. Remove Tenderloins, cut spine below hind quarters, and then split them. Trim all I can for grinding. Love my venison as does the whole family.....

Because of a new diet that my wife has, we tried grilling up strips of venison on a griddle, and then mixing it in with some veggies, kind of a stir-fry way of cooking, it came out pretty good. She seasoned it and let it marinade for a few hours first. About a 3 on the dookie meter.

I have had an old buck or two that was a bit rank, but young bucks and does are among the finest meats. I love a simple deer steak or backstrap medallions just seared on each side and still rare in the middle with just salt, pepper, and a dash of garlic powder. I save all the fancy methods for lesser cuts of meats.
For stinky males of any type a few days in a cooler being drained often helps. Flavored brines and/or marinades help too. Chili, spaghetti sauce, or chopped with lots of BBQ sauce will hide just about anything. If all else fails the dogs will love it or you can just drop your game off at my house right up front.

I don't know what dookie tastes like, nor do I care to find out ... but I do know that I would agree 100% with these sentiments relating to rocky mountain mule deer I have taken. Just a foul foul odor even with a clean shot, proper cleaning & processing ... can tell when it's being cooked, just a nasty smell and doesn't taste any better. I have been told it's due to their diet (pinion, grease wood, sage, etc.) but who knows.

I was just given some so called "Deer Chili meat" I can say its the first time I had deer that and smelled like an old goat. I think my buddy got ripped off by the processor. That's why I do it myself.
Sometimes it's hard being me! But somebody has to do it.

He just may not care for the little game taste that deer has. Maybe if treated them the way we do fallow, it would take some of that away. As soon as you have them skinned and quartered, put them in a extra large cooler, cover in ice and add a gallon or two of water. Drain the bloody water off every day, and add more ice and water for 3-4 days before having them processed. Also using garlic to season wild meat when cooking, instead of salt takes away the game taste.

Did the meat have freezer burn? sometimes it will yield that type of tastes! if you have freezer burn just cut off that part, it will help! My marinade if simple, HEB italian salad dressing, garlic powder, light salt, coarse ground pepper, small amount of your favorite bbq rub, not much, let set 24hrs prior to cooking, either bag it or covered dish, in fridge. I cook over hot mesquite coals, lite sear, and turn couple times til done, NOT over cook! so many people over cook venison regardless what cuts you have. I have had them all, doing it for 30+ yrs you know whats good or not!
Wine, beer folks can add accordingly to more flavor, old shiner bock is good too!

Don't wipe with it before you eat it? LOL Try making deer chili....Wick Fowlers 2 Alarm, chopped sweet onion, Rotel tomaters and beer in with it. Yep, that's pretty much my standard recipe. A dash of cinnamon too. Might add bell pepper if I'm really feelin' it.
