Usually buy day-to-day stuff at Brookshires but had to go to HEB yesterday because my GF's cat likes Wild West Crunch, not Barnyard Bonanza, flavored treats...anyway, while there I looked at their brisket pile and found one that was small. It's a whole brisket, with a point, a flat, and a nice fat cap, but the whole thing is about the size of the flat of a normal size brisket. Rubbed it down last night with my 3/3 rub and about throw it on the smoker. Should be just the right size since it'll be just the GF and I eating off it. Was this brisket off a sick calf, a tiny cow, or what? Not sure what to do with my time and temp on brisket this small, will probably treat it like a pork butt roast. Anyway, 'morning everybody!

It had a really thick, like 2", fat cap that I cut down to one inch. It's stalled right now at 163. Getting a reallly nice bark, though. Smoker's holding 200 steady with no problem, even though it's raining.

lol...brisket turned out fanastic. For size reference, after smoking I separated the point from the flat for slicing and the entire point end fit in my hand. Had a lot of smokiness. I'm keeping my eye out for this size brisket from now on unless for a larger group.

For family eating we would kill and process a calf every year. Grass fed until the last month then feed it heavy with feed made from whole ear corn, cotton seed meal and molasses which kept the dust down as well as calories. The feed was ground at the local co-op. Brisket you described sounds like one from about a 600lb calf size wise.

When cattle prices were down we sold most of the calves to friends and coworkers raised the same way, when ready take theirs to a processor and they picked up frozen packaged beef. Made a bit extra that way than taking them to the sale.
