These are really larger than I would have bought
at the grocery even if they were available. I will have to slice more of the tops off them and stack them in my pot.



I usually buy ground chuck. I found this in my freezer and decided to use it.



My recipe is pretty simple. I make up ground beef like you would for Spanish rice dish. Most recipes call for cooked rice. I like to use uncooked rice. It puffs up and makes the peppers stand a little better. Here are seven peppers as they came out of the oven. I topped them with a creole sauce.




Here it is plated, with blackened peas, sliced tomatoes, chow chow, and scratch cornbread.

Those are beauty's, Bill. I wish I liked bell peppers but they just taste like crap to me. They look like they should be good.

I love stuffed bell peppers. Don't really care for bell peppers though. I'll usually use big peppers so I can fit more in em and I'll only eat part of the pepper. The wife will eat the rest of my pepper. I Always seem to use ground venison
