I start with a couple dozen ripe tomatoes, around three pounds on onions, and three jalapeņos per pint. I'll add tomato paste at energy end.



I scald the tomatoes and put them in a cold water bath.



They all go into my food chopper, then into a five quart pot. I put them in pint jars and a hot water bath. They come out looking like this.




Those turning tomatoes in the first picture are for my neighbors.

I use salt, vinegar, and a little sugar. My jar lids all clicked as soon as they came out of the hot water bath. The food chopper really is handy for this dish.

I use a similar recipe for my marinara. I cut back on my jalapeņos, add bell peppers, basil, and oregano in that and freeze it. Sometimes I add yellow squash and zucchini.

It's about like Pace medium. I never know how hot the jalapeņos will be form one year to the next.

Sounds great! I'd have to put a little cilantro in it. I love that stuff.

I also love cilantro. My garden was loaded with it. It simply does not hold its flavor when canned. I add it to the salsa for some dishes.

I just made my first batch this year too, made 5 pints, pretty much the same recipe. I added the cilantro, a red and green pepper, but for the most part it is the same. came out basically as a pace medium as well. tasty.

You can buy a can of store brand chopped tomatoes for a dollar. They work fine.

I usually use 6 tomatillos, 4 serranos, an onion, 2 cloves of garlic and salt, cumin and lime to taste.

I used 3 green tomatoes out of mother's garden a few weeks back and the result was the same.
