I love barbacoa, hold the brains.
Yessr I just ate a plate of chorizo & egg tacos covered in melted mozzarella cheese. food I'm down to two tortillas now, the struggle is real. grin

Not sure about Red Chevy, but I've never found a store bought brand that I really like. Sometimes I like the flavor but always too greasy for me. I make my own, and it's damn good. I use strictly feral pork and La India Chorizo Seasoning, love that stuff. Just follow the directions on the jug. If I do add fat to mine (bacon ends & pieces) it's not very much, mine is pretty lean. I like just enough fat for it to cook, most of the time I have to add a little olive oil when cooking so it won't dry out. I'm not a fan of all that grease. Some say mine is a little too lean, but that's the way I like it.

yep, all store bought chorizo that I have tried is very greasy and I usually drain off the grease. I then chop up a previously baked potato in small chunks and toss in after draining well and bring back up to temp to crisp up the potatoes.
