Marinade, flour, and fry.
I use to eat Squirrel dang near once a week growing up. Its what got me into hunting. Always thought grilled Squirrel sounded great but it never was. Always had good flavor but was so dang tough you couldn't eat it.

That is probably my favorite game meat! Most squirrels need to be parboiled in salted water until tender before you fry them. The real young ones can be fried directly. Fricasee is great too!

Marinate in buttermilk, batter & fry young and old. Squirrel & dumplings is also a favorite. grew up next to a small pecan orchard, old lady told my brother and I to kill as many as we could, so we had squirrel at least once a week for years. Mom would either German fry (low heat, a little oil, covered) or make squirrel dumplings. You just have to cook slow or parboil otherwise they can be pretty tough!

Cook them low and slow, crock pot is great. Throw a squirrel and a rabbit in there with celery carrots potatoes and an onion, little bit of beef stock.

Haven't had tree rat since I was a kid growing up on a farm, my mother would make them with dumplings.

Buttermilk, flour plus SPG breading, covered cast iron skillet, bacon grease. Fried every one as a kid. There was a bunch.
