Just curious. Is it illegal to sell Deer Meat, whether Exotic like Axis or Native like WhiteTail ? Friends keep asking me to make them some Venison jerky or Venison Kababs and they are willing to pay for it. Anyone got any ideas? I aint selling to restaurants. Just curious.

Yes, it is illegal. You can only sell certain things as enumerated below.

Sale of Inedible Wildlife Parts
The following inedible wildlife parts may be purchased or sold provided the part was lawfully taken or possessed:

Hair, hide, antlers, bones, horns, skull, hooves, or sinew from the following game animals: mule deer, white-tailed deer, pronghorn antelope, desert bighorn sheep, gray or cat squirrels, fox squirrels or red squirrels, and collared peccary or javelina.
Feathers from ducks, geese, and brant may be used, purchased, or sold for making fishing flies, pillows, mattresses, and similar commercial uses.
Feathers from migratory birds may not be purchased or sold for hats or ornamental purposes nor may a person purchase or sell mounted migratory game bird specimens taken by hunting.
Feathers, bones, or feet of game birds other than migratory game birds (turkey, grouse, pheasant, partridge, quail, and chachalaca).

have them give you the meat and charge for time and ingredients for the jerky, that would be legal.

give them the meat and just charge for the jerky making, charge a lot. grin

Have them help you and don't charge them Have them pay for anything you use to make it. Or it is like anything else if nobody turns you in it is not illegal. The only time you need to worry is if somebody gets sick.

I guess exotics are fine since they privately raised & non-native. Their meat can be sold

Exotics are livestock. That meat can be sold.
Whitetail or native game I believe are illegal.

I know there used to be a strong meat market industry use of fallow deer in the US and there are companies that harvest axis and other exotics in Texas and in Florida and sell the meat.

Exotics can be sold. But I think if you are selling it it would have to be inspected. I know they used to shoot excess exotics and had a USDA inspector in the trailer that they butchered them in. They also sold wild hog meat but it also was inspected.
