How about buying the whole Steer on the hoof. Rowdy (4 years old) is about 6 foot tall with about the same spread of horn. Take the horn and eat the rest. Be a fine Red cape also. Figure he would weigh in around 1800 pounds on the hoof. They won't be able to say about you "All Hat and No Cattle" $1000 bucks. Would make a good front pasture cow.
