as booger stated, endless ... you can also butterfly the roast out, stuff with a variety of items (sausage, bacon, mushrooms, onions, peppers, cream cheese, cheddar, swiss, etc.) and wrap in bacon, smoke low & slow for a couple of hours, then move to hotter area of pit (or oven) until center hits 150ish (unless you stuff with sausage, hit 165ish center then) ... let slightly cool and cut across the grain.

Something that hasn't been mentioned yet is what I call "Camp Food". I make a foil packet with two layers of heavy duty foil. Cube up your venison or pork and make that your first layer (season a little). 2'nd layer is cubed golden potatoes, then onion, then bell pepper & garlic, then serrano peppers unless I'm feeding little ones, then season again and top that off with a big can of Bush's Baked Beans. Pull the foil up tight and seal off. Put in oven or on pit low and slow for 4-6 hrs, sometimes 8 depending. Good stuff. up

Shish kabobs (marinate first), venison & broccoli, carne guisada, taquitos mexicanos, tons of possibilities.

Fajitas, London broil for both of those slice with grain half to 3/4 inch and follow recipe.

Stir fry. cube for k-bobs.

Peel all silver skin off, coat heavy for 12 to 24 hours in fridge with montreal steak seasoning, let sit out until room temp then cook to rare or medium rare, slice thin cross grain and serve with veggies and taters.

Cut in cubes for stew

grind for chili, meat loaf, with 25% bacon for burgers...

Jerkey

Like Booger said pretty much endless
