That bacon looks really good! Did you dry cure or wet cure, or is it "fresh" without cure? What wood did you smoke it with? Hot or cold smoke?

I've had the best luck finding good-priced pork belly at Asian grocery stores. The photo below is wet-cured (7 days in the fridge) and cold smoked with pecan. I've also cured and smoked pork loin for back bacon or Canadian bacon. Turns out the loin is less fatty than a ham, so makes leaner and healthier meat than ham. I couldn't find a picture of the back bacon quickly, though.

It was dry cure, I guess. I got the recipe and process on the Primo grill forum. Mixed up the rub and then bag and refrigerate for 5 days. I smoked with pecan 200° until internal temp reachedo 150°. I found the bellies at Fiesta grocery. I plan on the loin next. I was surprised how easy it was. Yummy.

I have some that Payne gave me. I'm saving it until my tomatoes come in.

I've always wanted to try the Canadian bacon. Those pork loins are really cheap in Kroger when they put them on sale.

I really like pecan on pork. Good luck with the smoked loin. To me it is almost better than ham!
