Anyone Tried Buffalo Fish?

Buddy snagged a HUGE buffalo yesterday while we were trolling. Decided to keep it and try it out. Anyone ever cooked it? Meat looks a little bit like King fish.

I had it when I was growing up. It's the same as carp. Pretty bony.

YES! My grandmother would salt and pepper it and bake the fish...then debone it and make fish cakes out of it and damn they were good! she would saute onion with a little bell pepper and garlic then add egg and crackers to it then fry them. was just talking about this yesterday with a friend. good stuff

They called them buffalo balls in Arkansas. I've also heard of gar balls. You can fine them on Google.

Made gar balls before they were great! Tried it on the grill today, seasoned with blackened seasoning and cooked on the half shell over high heat. Tasted pretty good but I can still taste the fishiness.

Pressure cook....debone....mix meat with breadcrumbs and form into patties....fry patties....enjoy!

Turns out it makes really good catfish bait. Running some lines last night I took a slab of the meat just to try it out.. Caught 10 big'uns last night!

If you ever eat some buffalo ribs fried right you will give up catfish. The rest of the fish is just as good but takes a bit of knowledge to cut it up so that you don't have a world of small bones to contend with. Score the fillet across the slab of meat with about a 1/8 inch deep cuts every 1.5 inches, then tear it apart at the cuts. After cooking the forked bones will still be whole and will separate from the meat easy. BTW the 10-15 lb fish are the best.

They make great bait!!! that and pig heart is my favorite when fishing for the big ones... I usually take a palm sized chunk off and put on a big circle hook.. perfect for when the river is in motion filling up or going back down! good for giant gar too On the smaller river I fish the trip starts with bows in hand and once we shoot a buffalo or goo it will last as bait for the rest of the trip... normal ones we shoot are around 5-8lbs I bet

The neighbor ( from Romania) behind me would take the ones we got bow fishing. They cooked the ribs, made fish cakes and then made fish head soup. I have had the ribs and cakes but drew the line at the soup.

Never had Buffalo fish, but my Grandma would pressure cook & de-bone carp, gar, and tarpon. She would can what was left after frying up awesome fish patties. Later take canned fish, and fry up more fish patties. Will never forget her, at all ball games and track meets she was there....she always brought a small cooler of her awesome seasoned fish patties wrapped in foil and some lemon juice to squirt on them if you wanted, they were always warm. Would smash/roll/press an orange to death and then stick one of those heavy straws in it. A fried fish patty and fresh squeezed OJ and I was ready to get back on the field. Miss that woman.....

1. fillet Buffalo 2. season in salt pepper, flour. 3. place fillets in an "oiled" brown grocery bag 4. fold over bag, place in a 350 degree oven for 1 hour 5. remove fillets from bag 6. throw the fish away and eat the bag

Watched a commercial fisherman on Wright Patman clean a 20 pounder 25 years ago. Looked like he made 100 cuts on that fish. We breaded and fried it and every piece had either 1 rib bone or 1 fan looking bone. Best fried fish I ever ate.

Next time I'm gonna have to take more time cleaning it, I just cut out the filets and cut those into slabs about 1-2 lbs each. This was a HUGE fish.. maybe 55lbs or more. Definitely not bad though. My boat, buddy caught the fish
