what I don't get is someone so judgmental about how other people spend their time and money.

I have had 2 processors give me less meat than I thought I should receive, The first called me later and said they had another box for me. The second did not question me when I complained, they did call me back after checking and said they had more meat for me. Both processors have been in the business a long time.

Spot on.....As for that, I've had good processors and bad processors. I feel like now I've found a really good one in Austin. All your own deer back, costs more but better packaged and just better quality.

My brother and my son use a processor, an well known, nice straight shooting guy that puts out a good product. But he is running a business. I do my own. On average I get probably 20-25% more yield that they do, because I trim closer. Plus I still have my $150-$200 in my pocket.
I started decades ago because I was never satisfied with what I got back.

This is the key! Processors are running a business and trying to remain profitable. They are going to process your meat as quickly as possible and not concerned about getting every bite of meat off your carcass.

I take my deer in quartered and deboned, this saves a few bucks for me. Understand some take their deer in that have not been gutted let alone skinned. Have to expect to pay more.

Good processors are very slim in my opinion but there are some good ones out there..

Take mine to Hog and Meat Market(deboned) that have been in business since 1929 in Spring TX.. Know the owners very well and there prices are cheaper than anyone else around the NW Houston area. Track, track and double track your meat through the process. If I could make Fresh Italian, Salt/Pepper/Garlic and Jal. Chesse Sausage as good as they do and had many hours available to do it then maybe. Had 7 animals processed this year providing 228 lbs of meat(20% burger and 80% sausage) for $600. Leave home at 4 a.m. every morning and get home at 6-6:30 in the evening so it's a no brainer for me. You can't buy a pound of Bologna for $2.68/lb

I have to give old plantation the negative really not all that consistent. If you got the time processing is not that bad and you know what you're getting

The basic cut here in San Angelo is $95. They cut the backstrap into steaks, cut the tenderloins out, make steak out of the leg, (If you want) and grind the rest. Jerky, sausage, and tenderizing is extra, and it adds up fast. I've seen guys pay over $200 for one deer.

I'm glad to hear good things about Kuby's. I've been thinking about giving them a try next season. I usually process my own but haven't quite gotten the hang of sausage making.

Kuby's is awesome. I last used them in 2013 and will go back to them this year. In 2013 I took an 80 lb doe, a 165 lb buck, and a 200 lb buck to them (all field dressed weights). The backstraps on these three deer were all very, very different in size. What I got back from Kuby's was what I expected. There's no way they mixed my deer with others - hell I could tell from the backstrap diameter which deer I was eating smile I suspect the sausage and/or ground venison may be community but the backstrap isn't.

For those that do their own, that's great but it doesn't work for everyone. It's easier for me to have someone else do it. I don't mind paying for quality processing.

big fan of Kuby's. ad a hog turned into chipotle/mont jack and Jap/Cheddar sausage. It waa darn good. Reasonably priced and decent turnaround. They do co-mingle meat, unless you bring in enough to run a whole batch of a particular kind, I asked.

I tried Ye Olde Butcher shop in Plano, with a fallow doe. Did steaks and Sausage. Steaks came back quick, sausage took 2 month. decent priced and the sausage is really good.

Used Matador Meats in Plano, pass on them. Jap/cheese sausage was grity and just not that good. wrap job of meat wasn't anything to nice either. Way over priced.

No one does deer better than my wife and I. Haha, I'm sure there are thousands others that would say the same thing, but we live in Kansas so maybe just a few hundred around here. Best meat processor is you. You know what you want and the deer you shot that spent its entire life preparing your food deserves no less than your approval. Personally, we remove everything that is not pure red meat (even that slimy clear covering that layers every muscle!). There is significant waste, but the steaks we take from the deer we process we cook medium rare and would serve it to anyone that eats meat without fear of rejection. Zero gaminess. We don't mix salted pig with our burger either and make venison burgers like others (who would hire the assassin) make hamburger. Again, zero gaminess.
Yup, you are your best processor.
