Best steak I've ever made, 2" bone in ribeye smoked over oak and mesquite for 2 hours then finished in the cowboy wok. Cooked a little too long for me but the flavor and tenderness was off the charts. Little salad of arugula out of the garden, apple and blue cheese to get started.

Best of both worlds to me, little smoke and a great char. Wish I had pulled this one off about 5 mins earlier though.

yes!!! I usually season and put steaks, ribeye or t-bone, in the smoker running very low temp (110-120) for 45 minutes to an hour & a half depending on thickness ... then toss directly over hot coals for 2-5 minutes per side ... comes out medium rare (medium for my wife)...

I grill all my steaks over hardwood lump charcoal and oak wood chips. They get plenty of smoke flavor after 10-12 min on the grill.
