Couple quail the wife and I shot a few weeks ago.

Breaded with egg wash and seasoned flour (garlic powder, salt, pepper) Pan fried for 3 min on first side and 2 min on second with homemade gravy and chicken rice.



Think next time will bump the heat up a little more and reduce cook time to keep the breading crisp but cook meat a little less. They were great, very tender.

They look great. I bread mine ahead of time and let the breading get gummy. I use 50/50 cornstarch and seasoned flour mix. I keep the mix handy for several pan fried dishes.

They were great Bill, I used your recommendations from your post about it. Have had them bbq'ed a few times before but this was great, the wife liked it a lot better than bbq'ed as well.

I didn't bump up the old post to show you up. I added some pictures from my field dressing quail thread. There was a little disagreement about getting the breast out on the old thread. I can do it in 12 seconds.
