Bear meat is quite good of course it depends on what the bear has been eating. I wouldn't eat the meat if the bear had been grazing in a trash dump or extensively on bear baits. (like in Canada)

Bear roast is excellent!

I ate one piece that was chicken fried like venison. Tasted good to me, but I would imagine what the bear had been eating might have a bearing on taste. This one came from Arkansas, so he might have been eating Razorbacks ! smile

I had some when I was a kid. My uncle from North Carolina shot it and my aunt braised a roast of it in a dutch oven for several hours. I liked it and went back for seconds but my mom couldn't eat it. She said the fat coated her mouth.
I remember it tasting sorta like venison but a little different.
