Saw this the other day and this guy has some MAD sharp knife and knows exactly what he is doing!!

Helps when they are boiled first... seen that done that way in Mexico. Very fast, once you get to that point

I'd say he has done that a few times. Seems like someone posted a similar video last year with a guy at a ranch
doing a whole cow in about 10 minutes. Pretty neat the way they do it.
A clear conscience is often the sign of a fuzzy memory.
