I've got backstrap left over from last season. Does anyone ever ground up their backstrap and eat it as burger? My familiy eats more burger than backstrap.

Would seem a waste of a quality cut of meat. I'd butterfly and chicken fry it.

We eat more sausage than anything, I'll grind them up about half the time and make into sausage. Works just fine.
Shoot. Eat. Repeat.

Yes I have ground it up before during deer rich years. We too eat more ground meat than anything as well.

I ground mine up every year. Make's great hamburger and my family eats every bit of it.

leave it whole, butterfly that dude... stuff it with cream cheese, onion, and jalepenos, wrap in bacon... add rub of choice, smoke that sucker!!!!! Melts in your mouth....

Wow do as you must, But what a waste. Trade someone two to one ground for backstrap. That way you get more meat and the backstrap isn't a waste. Im sure you could find someone to take you up on that deal.

I've got two small kids that don't care for it. When we have a taste for a steak it ends up being a beef ribeye or tbone. We use burger the most in our spaghetti, tacos, ect. We don't ever buy beef burger.

I'm assuming the 'left over from last season' is the reason for this treason; if it was packaged/frozen well it should still be good as the day you put it in; I've eaten 2+year-old venison and it was still good as fresh!

I ground up the "trimmings" when processing a deer. Backstrap ends up grilled or fried.

Meat is made to be eaten. Doesn't really matter if it is steaks, roasts, chops, stew meat or grind. I've ground whole deer including the tenderloins. I've also made entire deer including straps and loins into jerky. Use it as you see fit, just don't waste it.
