Trying to get into processing my own deer and am looking to practice next week after I shoot a doe. I have grounded one up and cut steaks and am ready to try sausage. Any of you guys willing to give me some tips on recipe/tips? I am thinking breakfast will be easier since I will not have to smoke it. Help me out fellas!

Breakfast is easy. Mix it with 60 percent pork butt and add your seasons. I like salt, black pepper, red pepper, and sage.

Like Bill said, breakfast is easy. I mix it about 50/50 with pork now and this year I just bought premade seasoning of regular and maple flavored. I've made my own spices in the past too.

This will be my first year making stuffed/smoked sausage. I stuffed about 5lbs of Italian a couple of days ago but it is a fresh sausage. I'm waiting until season is over to make my smoked sausage but already have it mixed and ground.

If you have or have access to a Masterbuilt electric smoker, that will work to smoke small batches. I use one when I make small batches of summer sausage. Summer sausage is one of the easiest sausages to make in my opinion. I have made some outstanding stuff with homemade recipes and with storebought (LEM or Hi mountain) seasoning from academy. I use an A-MAZE-N 5x8 Pellet Smoker in my Masterbuilt and I customized the inside of the smoker so I could hang summer sausage vertically. It does an awesome job.

I'd do more like 60/40 venison and pork fat. This sausage I made came out absolutely excellent.
