Can I substitute kidney in a bean recipe that calls for pinto beans?
Gonna make beans, dont want to get out in the snow, and we have a bag of kidney beans. I don't even know why. I've never cooked kidney beans before.

They use them all the time in New Orleans for red beans and rice. Use them and save yourself a trip. Take the lid off after they're done an boil them down to thicken the juice.

Last minute decision so I didn't soak. That just means it'll take longer right?

pretty much. helps soften the skin as well. just don't put in salt until the end or that'll toughen up the skin even more.

I heard that too. Also heard to add a little baking soda to soften the skins. I discount both ideas. If I soak beans, I soak in salt water then discard the liquid and cook in fresh water which I will immediately season.

Salt is your friend.

That was the last of our ham but I have a big ham bone in the freezer. Gonna need a good ham bone soup recipe.

those look good! i like kidney beans but normally cook pintos, black beans or northern beans....its been awhile tho so maybe i'll get some at the store tomorrow!

To be honest, this recipe is way better than normal. Not sure if it's the kidneys or the fact that I used the leftover smoked Christmas ham instead of bacon.

whenever i smoke a ham i always save the bone and some of the meat for beans you cant ever go wrong with it!
