I'm not sure I would buy tenderloin for fajitas, but I assure you that tenderloin beats skirts. I made them from leftovers tonight with nachos. Ever use other cuts for fajitas?

I've eaten beef skirt(true fajitas) for years. You need two things. A meat tenderizer both mechanical and the spice and you need to marinate them for minimum of 12 hours. Grilled and cut properly against the grain and its a fine cut of beef!

I use thin cut sirloin alot. Just dont like skirt steak.
Haven't had it in years but never spit any out. I am a sucker for happy endings and strapped cowboys.

It's simply my favorite thing to do with leftover steak. I don't eat as much as I once did.

Skirt steak marinated overnight in Italian dressing. Sprinkle with fajita seasoning and grill over mesquite. Slice across the grain. Don't over cook. Ok,now I'm hungry.
