Lost my recipe for making breakfast sausage. I found it on here and it was great, but can't find it using the search feature. So please please post up your recipes song can try and find it or find a new one. Will be using deer and hog for the sausage

I go the easy route, 1/3 boston butts, 2/3 venison with Old Plantation seasoning, plus red pepper to taste. If stuffing and smoking will use 1.5 the recommended amount of Old plantation seasoning

up Have you tried the "Smoked Sausage" Seasoning, or are you using a breakfast blend for smoked?

Just using the breakfast blend like my parents did, worked for years of good sausage and every time I eat it there is a reminder of times gone by. With the cold smoker cannot get quite the same as it was smoking it 3 days hanging in the smoke house with green hickory smoke rolling but turns out ok.

Grind the venison and spread in in cookie sheets a couple of inches thick. Salt it evenly, put red pepper flakes on it evenly, put cracked black pepper on it, put a fair amount of good quality dried summer savory on it, lastly put cayenne pepper on it. Go a little easy on the cayenne if some in the family like it mild. Mix all that up well, by hand. I mix mine about 60/40 to 65/35 with store bought Owens or Jimmy Deans hot. chunk up the store bought and put it on top of the venison and hand mix it up real good. Fry up a few pieces and taste it. If its not hot enough put in more cayenne. If it leaves grease in the pan you used too much store bought. I stay away from sage and garlic. Over the years it was those two that could mess up a batch the quickest. I use the coarse grind plate when I grind the meat, I like it with something to it rather than the fine grind, that's too mushy for me. This is patty type breakfast sausage. I vacuum seal in roughly pound and a half portions.

2 lbs ground venison, 1 lb pork butt, 3 tsp salt, 1 1/2 tsp dried parsley, 1 1/2 tsp dried sage, 1 tsp black pepper, 3/4 tsp thyme, 3/4 tsp crushed red pepper, 3/4 tsp coriander, 3/4 tsp cayenne pepper.

Mix it all up and pan fry. It tastes like a homemade version of Jimmy Dean.
