Found a skirt steak marked down yesterday and thought I'd give jerky making a go. Marinaded over night in soy sause with some garlic, salt, pepper, and onion powder.

I snuck a little piece off the smoker and flavor isn't bad but I think it could better. What do you guys use for jerky seasoning?

I usually by the "kits" that are readily available, but just the other day a guy was telling me about using "Claudes" marinating sauce that is used for briskets and fajitas. They have several flavors and supposedly its got the same things that most jerky mixes have in them.

First attempt came out decent. Think I can do better. Thanks for the recipe. I'll give that a go next time.
