I just shot a wild hog for the first time this last weekend but have heard lots of negative things about eating them. Some comments have been about the taste not being as good, but the majority of the concern is of disease they may carry. Anyone have any advice/experience with this?

And if it is okay to eat, how would you clean and prepare it? I assume skin/quarter similar to a deer? Would you cut hams? Or grind into sausage?

I eat everything up to about 125 pounds other that that it gets a little tough. Process it how you like. Sausage /blackstrap/ tenderloin / ribs it's all good! I love mesons wild hog!!

All about the care you take with the meat. Just got back 50 lbs of link and pan sausage from a wild pig. Got 30 lbs more on the way. Tastes great. Skin and quarter just like a deer.

Lots of misinformation out there! The hog buying centers in Texas are not buying them just to dispose of them. They are also paying more for larger hogs.

I have always been told any sow is fine. I shot a 250 pound sow a few years ago and it was great. A boar is good up to 200 pounds Is what I have heard.

Some hogs just stink to high heaven. Hang them and wash them down before you touch them with a knife and enjoy.
