I do like some posted above, pull the deer's backside through the pelvis when gutting, this is easy and no cutting or breaking any bones. Then remove the hams from the pelvis by cutting the muscles loose from the pelvic bone. Then remove the lower legs by separating the joints. The ham is almost de-boned at this point. This way there are no sharp edges and bones sticking out and it bags up nicely without poking holes in your bags. (if you bag up your deer) I had a guy recently that was a bone breaker. He broke the pelvis, sawed off the legs etc. He had bags breaking and leaking with bones sticking through them. I was cautious, I didn't want to get jabbed. Just not my style.

I used to split the seam but no mass. Just take the hind legs off at the ball joint..

I used to split the seam but no mass. Just take the hind legs off at the ball joint.. That doesn't seem relevant, unless I'm missing something. We're talking about how to split the pelvis -- that has nothing to do with removing the rear quarters.

I use a hatchet, when I do it (I don't always) and also use the hatchet to severe the head from the spine. this - good hatchet and done in blink of any eye - everything else done with a pocket knife - will have the deer on the ground and completely gutted within two minutes

I see no reason to ever cut the pelvis. One reason is to allow you to lift out the lower intestine and anus instead of pulling it through and possibly spilling some droppings onto the inside flesh. I don't consider that a big reason, but it IS a reason.

My dad's a firm believer in cutting the anus out and pulling it through, but I can gut a whole deer in the time it takes him just to cut the butt hole out.

I see no reason to ever cut the pelvis. Faster and cleaner if you are gutting the deer.

No need. Never gut a deer anymore. Just cut the hams and make a small cut on either side to grab the tender loins.
Sometimes it's hard being me! But somebody has to do it.

No. If you have the right equipment, that being a good sharp knife and a deer hoist, there is no need to do this. And I'll finish my gut job just as fast or faster than those of you that saw and break bone.

Agreed Pitchfork, with a sharp knife and some elevation either hoisted or rope through a tree, I can clean one inside of 15 minutes with no bladder breakage and no poopy spilling in the cavity..

I use a hatchet but don't do it until the very end to separate the two hams. I don't see how it would be beneficial to do it prior to gutting.
Just to make sure that it is done thoroughly, I go both ways.

Loppers. I hang the deer head down, core out the channel and open the cavity. Guts fall down into the ribcage and stay inside there. Only reason I use the loppers is beause its fast and some quick cuts with the loppers to split and put into the ice chest. I guess some of you are talking about splitting that bone with the deer on the ground while in the field. I just core it out pull and it all comes out. No reason to cut the bone in the field.

For years I used a Schrade 105T Bowie and a rock or hammer to snap that pelvic seam, when I gutted on the ground. New guys I hunt with now, have a "skinning rack", and I use a SOG "revolver" knife exclusively, gut hook, skinner, flips to a saw that is wicked...

There's a seam right down the middle, you can locate it on most deer because their is a bump or point on the underneath side. I put the point of the blade against the spine and just lever down through the seam from the front. This^^^ If you learn to hit the spot, it is the quickest and cleanest way IMO. yep ... rarely do I need more than a knife. I have an old style folding machete in the truck if I need more, lopes too. I have seen others use the rim out and pull thru method, but I have seen more than half the time leakage into the inside of the deer using that method.

its easy to cut around the pelvis with a knife and break the tendon in that ball joint to the hams then split it apart. Then you dont get any bone pieces from a saw on it. No one does it that way? x2!

I now use this for the pelvis and the brisket. Cuts both in less than 30 seconds. Even on Elk size game..

I use a hatchet if i have to do it quick. You can also cut the ham meat down to the ball socket (following the pelvis on each side) and separate the hams fairly easily with the tip of your knife. Only thing holding it together is a few ligaments. Keeps the hams intact and gets rid of the pelvic bone.

I have watch guys do this with the pelvic saw, or any small saws and just using the tip of knife and palm of hand. I don't do it at all. Why do it any way? Cut around the butt hole and pull it through when ya pull the guts out......this way no bone fragments and no meat cleaning. Ive had plenty of poop and various other liquids on does come running out of the rearward facing openings that I would much rather be dealing with bone chips. Ever shoot a doe that was recently bread by a buck who maybe didn't quite hit the mark.. yeah ill take the bone chips. LOL!!!! GROSS!

Only reason I'd even mess with it is to fit qtrs in a smaller cooler. If possible i'll keep hams together and use the butt out tool. That thing's a game changer

I now use this for the pelvis and the brisket. Cuts both in less than 30 seconds. Even on Elk size game.. Those are great. I got one of those as a tip one time and its handy. Between that, a Havalon knife, and the receiver hitch winch/hoist, just three necessary items for when I go hunting.
