A friend is asking about a good deer processor specifically for sausage. He does his own processing of everything except sausage.

I saw one recent mention for Carnes between Whitehouse and Troup. Any other experience with Carnes?

Any recommendations for someone within 25-30 miles of Tyler?

What about Royce's or Country Meat Market?

Any feedback welcome.

Carnes just south of Whitehouse. Best one around.

I use Wade Calhoun in Big Sandy. He did two types of sausages for me with the cuttings from the steaks on some axis does and sika buck I shot in October. The spicy is just at the limit of what I enjoy and the mild is also very good. I can't say which I like better, they are both very tasty.

Carnes all the way. Some of the best sausage I've had. I took him 3 deer last year all sausage.

Country meat market is terrible
