This is my small collection of not so fancy camp/butcher knives. I have been thinking for a while I'd like to add a cleaver, a midsize chef knife of the same make (older high carbon old Hickory, Ontario, or Dexter brand), and find somebody to refurb them. Maybe fix up the handles, reshape the blades a little so the edges are straight. Then find a canvas or leather knife roll and I'm set for life. Not a chef but I cook quite a bit. I have a big box store set of stainless blades in the kitchen that my wife likes to run through the dishwasher.....These are more for toting in my chuck wagon to cook when I'm afield and carrying when I'm cooking at Church, benefit meals and the like. They will (do) get put to good use, so I'm not looking for something pretty to stick in a display case. Just wondering what you pro's think about it and if anybody would be interested in handling it.

I have those and some other high carbon blades. I'm also a high carbon fan. Other than the middle one, the blades look OK on here and can be sorted out fairly easily.
What's wrong with the handles?
The tarnish, if it bothers you, can be removed with Simichrome.
Without a sense of urgency, nothing ever happens.

For butchering work it's hard to beat a sharpened high carbon blade...just make sure you clean and oil the blades before you put it up or it will rust. The middle deboning knife can be buffed out and as Dave said all the rest look good. You seem to be handy from some of the photobucket pics... try building your own cleaver. Buy a SS607 Stainless Cleaver Blade from Jantz Supply for $20 put some mesquite handles on it for another $10. Worst case is you screw up on the handles..buy some more. PM me if you need help. I'd do it but I am backlogged for a year.

That top one looks like a Henckels and shouldn't be messed with. It's a classic.
The bottom one is a standard butcher and could be of any make. Looks like some rust and that's a 5 minute job.
Don't sweat the tarnish. It's going to happen no matter what you do.
If you want to do them, you come by my house in Hurst. I have all of the stuff and it shouldn't take long.

Can't remember where exactly they came from but I've been using them for years. Think the big one my brother got me an estate sale, the one on the right belonged to my brother in law who passed away, and the middle was one of my grand parents. I also have grandpa's old steel.
The coloring on the blades doesn't bother me, the old handles don't really bother me either. The one on the right lost a rivet at one time and somebody replaced it with a screw and nut then ground it off. I might like to fix that.
Every once in a while if the blades start looking grungy I'll hit them with a little barkeepers friend.
Main thing that bothers me is the curve in the blade where they have been sharpened away. Not a big deal.
Probably should just leave them alone, maybe hit the handles with a little mineral oil and find a couple more to finish out the set.
Still need a knife roll. There are some nice ones on ETSY.

Yeah, I remember old style military bag for daughters. Were there 2 bags or one?
You remember where I live; Hurst. It ought to take less than an hour to get them in good shape. I'm retired so life isn't all that busy for me.
