My daughter shot a doe last night. I've got the meat in a cooler, quartered and deboned. I have made done it chicken fried as well as seasoned pan seared (no batter). Looking for a new recipe to try.

How do you like to cook venison?

I keep it simple I use McCormick's Cowboy Rub, I take each steak or chop sprinkle with the rub and pat it in (don't rub you'll just rub it off) turn and do the other side. I heat a small amount of either olive or canola in a covered frying pan on high, sear a minute and half on each side. Turn down the heat to medium and add a couple of ounces of water about 2 more minutes to a side. The time on medium will vary depending on thickness, the liquid in the bottom can be spooned over the meat for extra flavor.

If you like crockpot cooking, try this:

3 lbs (give or take) venison round steak
1 LG white onion, rough chopped
3 14.5oz cans Hunts Fire-Roasted Diced Tomatoes
1 7oz can Chopped Green Chilis
2 beef bouillon cubes
28 oz water (about two cans worth)
Olive oil
Salt
Pepper

In a large skillet, saute a large chopped onion in 1-2 TBSP of olive oil until clear but not cooked down. Transfer onion to a 6-7 qt crockpot. Salt and pepper the steak to your liking, then brown both sides quickly on high heat in the same skillet, adding more oil if desired. Transfer the steak to the crockpot. Add the tomatoes, chilis, bouillon cubes and water to the crockpot. Stir well and set on high for 4-5 hours, stirring periodically (60-90 minutes for me). Let simmer on low or warm for about another hour. Serve over rice or by itself. Enjoy!

google search 5 best venison marinades, click on the article with this title and find the recipe containing apple cider/juice in the marinade. use this marinade for about 6 hours, and the apple cider makes the meat swell up a little. I like to take a 1" butterflied backstrap streak and put cream cheese mixed with streaded cheddar cheese in the crack created by the butterfly cut and then put 2 slices of jalepeno in the chesse, wrap the whole thing with two strands on bacon and grill for about 5-7 minutes a side. you need to watch it closely because the bacon may burn of drip so much grease that the steak will catch on fire. if you have a problem with either of these issues, I like to sear the meat on each side until the bacon starts creating the problem and then finish it on tin foil. if the steak is too rare when taken off the grill just pop in the microwave real quick and finish it off. I would think you could do something similar with chunks of ham steaks or another cut. this recipe is delicious and my wife won't allow me to cook the backstrap any other way now.

not just for venison but for any meat. Cut the venison up into bite size pieces. Mix half Tiger Sauce marinade (HEB has it or get online)and half Italian dressing. Place the venison in the marinade in fridge for 24 hours. Remove and wrap in bacon and grill. Incredible taste.

This is especially good with pork tenderloin pieces

I have pan seared it in olive oil and the simmered it in marinara. Pretty dang good.

wrap with onion, jalepeno, and bacon and grilled..... I marinate the steaks in 1/3 worstershire, 1/3 apple juice,1/3 soy sauce, add Louisiana Hot sauce to taste and a little Italian dressing. season with Tonys, Cavenders and some garlic and onion powder....
SIMPLY AWESOME!!!

Venison Piccata

6-8 venison cutlets
4 tbsp grated Parmesan cheese
2/3 cup flour
salt, pepper, parsley flakes, garlic powder
8 tbsp olive oil
4 tbsp butter + 4 tbsp butter
1 cup chicken stock
1/2 cup fresh lemon juice
2/3 cup capers

Pound the cutlets until they're very thin. Heat the olive oil and the first 4 tbsp of butter in a large skillet. Dredge the cutlets in the mixture of flour, Parmesan cheese, salt, pepper, parsley flakes and garlic powder. Brown the cutlets in the skillet, about 3-4 minutes each side. Remove and reserve the meat. Add chicken stock, second 4 tbsp of butter, and lemon juice to the skillet and boil, stirring in some of the remaining dredge mixture to thicken. Put cutlets back in and add capers. Reduce to simmer to thicken the mixture. Plate the cutlets and cover with sauce.

just a follow up - these recipes sound awesome and I will try some.

If you have never experienced Tiger Sauce it is worth the try - I am 62 and tasted many different recipes but the unique taste of this stuff leaves you wanting more - if anyone tries it let me know what you think -
