For a nice lodge and all that, I highly recommend the Flying P in Hico, TX.
Haven't had it in years but never spit any out. I am a sucker for happy endings and strapped cowboys.

Upland Bird near Corsicana is a good one.
If you've got some geetas, Rough Creek near Glen Rose. Best accommodations.
