When/where can I do it? Do I have to use a guide or can I get a permit and DIY?
For it is not the quarry that we truly seek, but the adventure.

A friend and I hunted them guided out of Vacherie, LA. Neat town and area and we got our 'gators, but I wouldn't recommend the outfitter. I've seen a few post on here that hunt the Texas side. Maybe they'll chime in.

There are several good gator hunts available on TPWD public hunts list. I think the hunts are in September and I believe the private land seasons are in September and April in Texas depending on location.

for a DIY trip, your best bet is to check the TPWD website like DJS303 mentions. There are lots of gators to be taken, especially along the cost. Our cousins get 8 - 10 tags each year for their place near Tivoli. Not uncommon to get 10 - 12 footers.

I've had alligator meat at fairs, if you harvest one is it easy to get and use all the meat off them?

There was a guy on here from LA that was trying to trade a deer hunt for a gator hunt a couple months ago. They were wanting to shoot a couple bucks this year in TX and then next year take you hunting for gators in LA. I don't know if it happened or not but I bet it would be fun. A hard sale IMO because of gator hunt coming last.
