It has good flavor, the roasts off the wildebeest are my favorite I prefer it over Elk and buffalo when cooking in a crock pot. The meat is comparable to any other game and it really comes down to meat care and preparation. I use it for making hamburgers on the grill without adding any other meat to it and they don't fall apart. the steaks tend to be a little tougher than I like but again this can be animal specific and cooking, I've had just about every game meat and any of it tends to be tough when not prepared perfectly or overlooked.

Plenty of nice Oryx left, we have numerous large cows topping upper 30's to low 40's, several Bulls in that same range, although cows will be the biggest.

An oryx we shot this week. This is an average sized cow, horns are 37" long, we weren't picky in selecting the biggest one. We had been hunting these for two days and these animals are very difficult to get less than 200 yards away from and for a 10 year old shooting from shooting sticks it's a challenge selecting the animal and getting a good shot off before the herd disappears. We were finally successful on day two with a nice cow. Animal weighed in at 380 pounds!
