Took a feral hog back strap, rubbed it w/ BBQ spice, garlic pepper, liquid smoke, brown sugar and apple sauce. Then it spent the night in the fridge in a ziplock, grilled it directly over some red hot mesquite coals for 4 min on each side. Moved to the cool side of the grill for 1.5 hrs (about 175 degrees)
Had some hash brown casserole w/ it. Awesome meal!
My wife usually says "it was ok" to my wild game dishes... she loved this one!
Canít wait to try some of that Black Panther I got in the freezer!
