I've got a SW MP15 (.556 - sport edition) AR that I was thinking of selling, because I was wanting to upgrade to an 7mm-08 AR platform....then I got to thinking, can I just replace the upper with a 7mm-08 upper. Has anyone done this and have a recommendation on a good 7mm-08 upper?

No, not from a 5.56. The 5.56 is an AR-15 platform, and the 7mm-08 would be on the AR-10 platform. The 7mm-08 is a longer case.

For an AR-15 about the most you can pack into it is the 25WSSM but good luck finding ammo. Other than the WSSMs the 6.5 Grendel is about the most you can get out of a AR-15 performance wise on game and longer range shooting as well.

Remington makes a factory R-25 in .243 and 7mm-08, I would just buy one of those. The ones I have seen are around $1200-1500.
