I made soup and like chicken salad out of trash geese. I plucked some, boned the, and then stuffed them back up for bakin.

Sometimes you can smoke them. We dropped them off at Dozers in Fulshear and had them smoked years ago. They came out fine.

Specs pluck and smoke
Canada same, gumbo, chicken fried strips, k-bobs. Good marinade for geese 1/2 cup zesty Italian dressing with 1/4 cup each maple syrup and Worcestershire sauce.
Snow geese not a fan of so no longer shoot them

Made some pretty good goose sausage a couple of years ago. Goose breast, pork, bacon ends, and blackening spice. Came out kinda like a Cajun taste and everyone liked it, even my wife.
