I was in the HEB in granbury and I always look at the meat mkt. even if I don`t need anything. They had choice skirt steak in the cry-o-vac bag for 4.48 lb. I sucked up 20 lbs. and skirted out the door. The trimmed ones were .50c lb. more. That is 3.00 lb. off the regular price.

I bought some one time and it was not like any skirt steak I had ever seen before.... HUGE chunks

yep, I bought, marinaded & smoked/cooked about 15 lbs weekend before last. will vacuum seal some for potential meals on our elk hunt. The bigger whole skirt steaks can be on the tough side, generously rub down with meat tenderizer & other spices for 24-48 hours really seems to help to make them more tender!

Flank steak or skirt steak is ( used too be ) cheapest cut of meat from a beef, then Fajitas became the thing. Before that it was used in ground beef rifle

I learned of fajitas while living in McAllen. We ate them a bunch. Butchers would sell cryo packed skirt steak for 1.29 a pound. I hauled an ice chest back to Houston (I was TAD to McAllen) and cooked them for my friends. Big mistake. They took off in Houston and the price shot up.

A staple around here. Better off marinading them for minimum of 24 hours, longer if you can.

In my past, but I now use leftover tenderloins or grilled chicken breast.

We rarely use them for fajitas. I eat them just like a steak. Great flavor and very tender if they are cooked right. It beats paying 15.00 lb. for a ribeye or NY strip.

The first time I ate skirt steak was on a guided hunt down by Edinburg in 1991. I had been cutting meat for 11 years and managing a meat dept. and could not figure out what cut of meat they were serving us. It was really good and tender and resembled a sirloin but I knew it wasn`t. They served it to us just like it was a steak.It wasn`t till a few years later when the Fajitas craze started that I figured it out. I will admit that it took a few times to fix it before I got it tender, but I have got it down now. I always cook enough to have some left over and make nachos out of them the next day.

I had my first fajita in that same area while whitewing hunting.

The skirt steak comes or in the diaphragm muscle.

first time I had "fajitas" was back in roughly 1982 at a Sunday school party. I started preparing them shortly thereafter and the skirt steak was cheap ... then the craze hit with prices drastically jumping.

If you want to eat it like a steak, you have to get them really clean. All the silver skin and blood lines have to go. Then, a little adolph's and your seasoning, roll them up, wrap them up, and store in the fridge for a day or so. You want to really grill them over a hot grill, and you do need to cook them well. I like to add BBQ sauce glaze just before I take them off the grill. Some steaks will be tough, no matter what, so just chop those up and grab a tortilla.
