A few of mine:
With over 50 different types of goat milk cheese, the Mexican Asadero is by far the best. Excellent in all Latino dishes
Extreme aged Irish White cheddar infused with Irish Whisky. Aged to the the point where it nearly crumbles but still has a soft texture.
Extra sharp English yellow cheddar, full of flavor with a bite
Extra aged Asiago with rosemary and olive oil. Sharp, pungent bite. Best to rest in your mouth and enjoy although you will be tempted to chew quickly.
Fairly green Havarti with Jalapeņo, great with Triscuit Thins
Aged Jack with habanero, another great snack on Rosemary, olive and roasted tomato crackers.
Best combo? A thin slice of apple and ripe cucumber with jalapeņo havarti on a triscuit cracker.
Can't rule out a fine aged feta for salads and dips
Or a good blue crumble on a burger.nothing like bite, sharp and creamy all in one flavor.

I like swiss and sharp chedar. Couple others ive eaten and really liked but have no idea what they were.

Worst cheese ive had was linberger.

Tilamook! good stuff!!! If you are ever in the PNW and have a chance to swing thru the town of Tilamook, be sure to stop in and visit the dairy! They have samples of all their various types of cheese and an ice cream bar like 3 or 4 Baskin Robbins combined, might rival Bluebell!

Is Tilamook unpasteurized like Sargento? I might have to pick some up. I'm a cheapo Kraft man, but doesn't hurt to branch out every once in a while.

I like most sharp or extra sharp cheddars but Tilamook is a favorite. I never noticed if it is pastuerized or not.
