Just curious. Are game processors registered, licensed or inspected by any government entity in Texas? Don't get me wrong, I'm not advocating Big Brother interfering or taxing someone trying to make a living. I've never had a problem, but someone could get very sick from careless handling of meat products. I know processors are required to keep a log for TPWD, but that's for different reasons.

The one I go to is a commercial, production line sausage company here in Austin, with a USDA inspector on site. They are only allowed 1 game animal on the line at a time, and they follow HACCP procedures. I think I pay a little more that some other places here, but A), they makes awesome sausages, B) I know it's my deer, and C) they know safe food handling procedures.

FG, what are you paying? I've used two, one of which charged me $4 a lb finished.
