I am a simple guy but do like the certain things in this world that bring brief pleasure as we age.. Especially are as cheese age. Some of my faves are:
English Extra sharp cheddar -hard
Havarti with jalapeño -soft, topped with a thin slice of apple
3 year aged Asiago - hard with caraway and basil, straight or with cucumber slice on a roasted pepper triscuit
Fresh Wisconsin cheese curds- very soft, let it melt in your mouth, the best
Aged Jack with habanero- hard on a Parmesan Garlic cracker and a thin slice of peach
Asadero slightly warmed and spread on a fresh tortilla with bits of fresh avocado. And chorizo if you have it.

You've given me some great ideas for office snacks. I keep grapes and cheese in the fridge. I'm gonna branch out. The cucumber will be first.
