50/50 mix of deer meat and pork. How long do you grill them? I was thinking about 6 minutes each side. Any secrets you use or do is appreciated

First and foremost use tongs, never and I mean never pierce them with a fork! Forks and sausage links are a big NO NO in my grilling world. I usually grill them until I've got nice grilling or bowning on all sides. Safe temp for pork is 160.

When your sausage swells up it's ready. I like to get mine a little brown. Just keep turning them every few minutes if cooking over direct heat.

I ended up making some jambalaya with the deer sausage and Jeez it was delicious. The kids even ate it up.

It may be heresy but I slice into mine before grilling to let the fat out. I found no difference in taste when I compared.

It may be heresy but I slice into mine before grilling to let the fat out. I found no difference in taste when I compared. Depends on the sausage. Beef/pork sausage has more fat in it than you can shake a stick at. Venison sausage will be nothing like that unless you add ample amounts of fat too it. A lot of 50/50 venison/pork sausage is dry on the grill even if you don't poke it.
