Looking for a good venison jerky recipe that I can make in the oven. I have about 75 pounds of venison that I would like to make into jerky for this upcoming season.

I really like AC Legg's Old Plantation brand peppered jerky seasoning, Google Allied Kenco Sales. Good stuff!

How long do you put it in the oven and at what temp?

biggest 1/4" strip slices i can cut, marinade 48 hours, on a jerky rack and in the oven at the lowest setting. I believe mine is 190 but I prop open the door to get it down to about 170 and helps let the moisture out. Its ready when you get the consistency/dryness you want. Remember it'll continue to dry out after you remove it and let it cool so not to dry or it'll turn into meat crackers.

small sample of last years batch. get ready for them to magically disappear. I would have added more red pepper flakes and black pepper to this batch to make it better. Otherwise great flavor.
