What my mom always made.

-9x13 pan
-4 lb meat
-1 sleeve saltine crackers
-1 box liption onion soup mix
-2 eggs
-1/2 cup catchup

Combine all ingredients add a little water and bake at 300-350 for 1-2 hours.

About the same except I use seasoned bread crumbs.

1 1/2 lb ground meat
1 small onion finely chopped
1/2 red bell pepper finely chopped
2 eggs
1 sleeve Ritz crackers
Form loaf and cover with ketchup
1 1/2 hr@ 325

those sound good

I saute diced onions, bell peppers, mushrooms, and jalapenos (depending on the audience) and add to my mixture before baking. Basically the same recipes as above.

My MIL puts bell peppers in hers, I really like that

Lots of good recipes for meatloaf. If you want to make it special, put it on your smoker instead of in the oven. Takes on the smoke really well.
