Separating brisket

First time I've separated the flat from the point before smoking. Had a 14 pounder in fridge and didn't want to be at it all hours. Lit fire at 5:30 this am and put it on before 7. Pulled the point off at 2 after this pic. The flat is running about 10 degrees behind, should be done soon. Curious how it's going to turn out. Anyone done it this way before?

I've been thinking about it but I usually separate towards the end if I'm making burnt ends. If making burnt ends it usually takes hours longer than the flat. You're getting a great crust and its looking good.

Interesting I would have thought the point would have taken longer.
I have never tried cooking them split already, may have to some time.

Yes I've done it and it turned out fine. I don't like to cut or poke my meat at ALL after I put it on, no likey losing juices. Those pics just made me hungry.

YUMMMM. Now I am hungry. looks like you cut with the grain. Try it the opposite way next time, it will be allot more tender when eating.
Never thought about separating before hand. I would just be concerned about how much fat is left on the top of the point. I might have to try this.

Never thought about separating before hand. I would just be concerned about how much fat is left on the top of the point. I might have to try this. I thought the same thing. Just didn`t want to say anything. Looks good either way.

minor concern.. gotta cut it the other way when you're eatin - unless you shove an entire slice in your mouth.
Looks absolutely perfect. Pretty sure I could down the whole thing about now.

looks good! I did one on Sunday.. My wife had an 18lb one in the freezer, too big for just the family for Sunday dinner I got out my reciprocating saw, washed the blade and cut it in half.
Smoked at around 200 over mesquite for 11 hours and then wrapped it for another hour.
yummy!

I kept mine whole the separated it and put the point back on for burnt ends while the flat rested.

Tres I do not. I wrap in foil after it's done to let it rest. I also wrap in a blanket and put in a cooler for at least 2 hours.

I've head of a lot of people using butcher paper now. When do you wrap it? Can you tell a difference?

Wrap when it stalls. Seems to come out a little juicier and retains bark a little better since it breaths. I need to do two at same time, 1 foil and 1 paper, but haven't yet.
