I've never bought one in my life. I got a couple from my neighbors garden . They were the banana shaped ones. I peeled them and added them to my pan fried potatoes for dinner tonight. I couldn't taste them in there.

How do you cook them?

Don't peel them or they just fall apart. Salt pepper olive oil and sear them good. I like to dust with a little curry powder.

Bill I love me some eggplant parmesian. Good ol Payne hooked me up with some and they were great.

Peel
Slice into 1/4 -3/8" cutlets. (don't be afraid to season with salt pepper) . They lack flavor without a lot of help)
Seasoned milk/egg wash mix
Corn meal
Skillet on med heat
I use virgin olive oil
Coat and cook til golden brown

I serve mine along side spaghetti. I also put marinara and mozzarella on top of the cooked eggplant and throw in the broiler for a few minutes.

This is the one I can do well. I use the big grapefruit size for it.

Mom taught me to wash and slice in half inch rounds. Dredge them through seasoned flour and pan fry in cast iron and bacon fat. Cook them brown and crispy and serve right from the skillet.

Slice into 1/2" thick pieces, bread, fry in skillet. Make a layer on bottom of a greased 9x13 pan, top with browned italian sausage (crumbled), your favorite spaghetti sauce and cover with shredded mozarella. Then repeat. Bake 30 min at 350 and serve with some good red wine.

My daughter is coming home Saturday and bringing a vegan friend. I'm making chicken Parmesan for Cathy and me. I thought I would make eggplant Parmesan for her vegan friend. I can get those little ones from neighbors garden, but they would be difficult to pan fry for the dish. I had planned to buy a big one. Walmart didn't have them.

If he is a true vegan, he'll not go near any food that came from anything that has a face. No egg/milk wash, no cheese. Make him fried green maters. Bet he never had that before.

The Parmesan came out fine. I topped the breaded and fried eggplant slices with mozzarella before I popped them in the over. I added some chopped eggplant to the marinara. That was Friday night.

Cathy and I had chicken fajitas Saturday night. I used some of the banana shaped eggplant to make him an eggplant fajitas. Everything came out fine. I put cheddar cheese on all the nachos. He's not as devout as some vegans.
