Hi,
I got a big boar in the cooler, what do I to make it taste good?
I have heard that keeping the meat in the cooler and letting the ice melt will help reduce the flavor? Can some one explain this a little?

Shoot them in the head. They taste fine. Shot a 200 lb boar in the head I'm still enjoying the sausage.
I'm a terrible shot but I follow up with a grenade!

So it is not the meat it self? It is the blood that makes it taste bad?

First thing I do when he hits the ground, is take out my knife. I start in front of the penis sheath and take the penis sheath and the penis all the way back to the testicles, removing the penis and testicles first. Then load him in the truck and skin and process as usual. Put the meat in a cooler with plenty of ice and let it soak for a day or so with grapefruit juice. Here in Florida we us sour oranges if they are in season. Removes all the gameiness. Try the backstraps first, if he's still a little gamey grind it into sausage as they said.

I think the main thing in warm weather is to get the meat on ice quickly. That, and of course to keep it clean. I'm kind of lazy, so after skinning I just separate the shoulders and hind quarters and cut out the back straps. The buzzards and coyotes get the rest. The advantages of this are: 1) Its simpler, since you don't have to mess with gutting. 2) Its cleaner, since you don't have to mess with gutting. 3) Its faster, since, well you know . . .

Like others have said, take the back straps, hams and shoulders. You make also a slurry of ice, water and salt to get the meat cooled down really quick. I'd soak for a few days, but make sure to drain and refill with ice daily.

Yep, get them quartered and on ice pronto. Keep from getting hair, dirt etc on the meat. I shot a 250 boar, had it on ice within 15mins. Shot him on a Saturday. Marinated loin chops with 1/2c OJ, 1/4c water 1 sprig fresh rosemary, 2-3 cloves garlic and 2 jalapenos pureed in a blender on Sunday, grilled over pecan fire on Monday.

The coyotes all types of pigs if theyre in the mood.
Recently got a gym membership, strange folks! I like to show up the roid zombies with my full motion curls with the 55lb. bells. Not their cheater short stroked light weights. It's holarious.

you could make sausage out of a boot and it would taste fine.... so if that's what your doing then no worries... but if your wanting to grill or whatnot then wash it.. the rank is on the skin and the knife puts it into the meat

We eat them all. Skin, quarter and cool asap. Do a brine soak on him and he will eat just fine.

The wife's cousin swears that if you soak the meat in buttermilk overnight it helps. Throw in an onion.
But a lot of it is keeping the meat cool quickly, and whatever they had to eat just before you shot them. Some are more gamey than others.

I know I have just showed my novices side but which? You would have to do a very through job of rinsing if you washed raw meat with any kind of soap, and I would have reservations about it even then. If you are hunting all night with out running water it would be hard to wash them before field dressing them!

Well I relisted that I was reading this in two threads, and it don't matter what you write if I do not reed what you wrote correctly. We will be hunting in the Panhandle on the first weekend in October, and will be two to three hrs from the house. We will be hunting at night and this is will be my first trip. Their guide is suppose to help with the cleaning and quartering so I will probably depend greatly on his expertise.
