At what temperature is it too warm to process a hog in the field. I have always felt 60 degrees was as warm as it should be when skinning, gutting and quartering. What say you?

Depends how quickly an individual can get through the process of cleaning an animal. x2 Skinned several in the 100's. Get them skinned gutted and on ice asap and they will be fine.

If you're really worried, cut the hams and backstrap out without gutting (skin starting @ the backbone to get to meat)! no temp is too hot for this!

Why is there a need to gut? I can remove all 4 quarters and backstraps without even getting close to gutting and making a mess. I can even get the tenderloins if i feel the size of the loins will be worth the effort. Just pull the skin back and git er done! Not only does it save a bunch of time, but the smell and mess of gutting too. Just have an ice chest sitting next to you and drop them in the chest as you pull the pieces off.

I am not real fast at the job but I have started doing the job without gutting the animal. When possible I bring them up to camp and hang by back legs. I also found it is good to go ahead and cut the head off in the beginning. With the head off the skin does not hang up so bad as I work it down. Thanks.

huntsolo on WMA land, ya lurn short-cuts.. First hogs took were 1 1/2 miles as crow flies from truck... First shot, hog went down drt, rest hogs scattered inta switch cain, tried dragging, i weighed 140# back then, could here hogs just 20+yrds away, so gutted ta make lighter ta drag, hogs came back.. 2nd shot, drt rest hogs kept eating, so leaned rifle waved arms, yelling, & moving forward.. Hogs left again, gutted both hogs, dragged lightest as far as could. It dark be this time. Walked back got rifle moved it ta hog, walked back ta big hog, ta cool down. Took 3 drags ta get ta light hog. Took rifle walked ta rest. Went back grabbed lightest dragged ta rifle. Reason gutted was, a lot lighter, trying ta get away from other hogs... Went ta truck, drove ta house ta get back pack.. Called friend, we meet at parking area.. Took 3 of us, if remember right 4 hours ta walk ta hogs, get backstaps & quarters from biggest hog. Took turns draging & backpacking hogs out ta truck... ta friends... Been doing it ever since, no gutting... Except time different buddy & i forgot back pack & used rope had for belt ta drag ... Warmer the weather fast ta ice... Ogh, forgot the ones in boat were son & i used trash bags ta keep body temp down... i forgot the ice chest... Edit: story bout two hogs at dark-thirty, was first year OSBWMA opened ta public...

You gotta understand that for the last few thousand years of eating hogs, folks didn't have refrigeration. Contrary to many rumors, hog meat doesn't 'spoil' all that quickly. On top of that and regardless of the time of year, the hog is hot. Even in the winter, a hog doesn't cool down all that fast. It takes a while.
Getting your hog on ice sooner is better than later, but unless you are more than a couple of hours drive from even getting to ice, then you are probably just fine regardless of the outside temperature.

Thanks for all the comments, have just always thought you had to really keep an eye on the temp when dealing with hogs. Never too old to learn.

I don't guy anything either. No reason to and all you do is make a big mess. I just cut the legs and back straps out on hogs and leave the rest as coyote bait. Then I skin the legs out on the tailgate of my Mule and debone it, leaving the bones and hide with the coyote bait. Then it all goes into the sink, where we wash it, cut it up, wrap it and put it in the freezer. This happens any time of the year, regardless of what the outside temperature is.

Above 40 degrees, if you're not cooking it you need to be chilling it.

If you can clean the meat w/in an hour this time of year you are fine, just get it on ice ASAP. I am going again tonight, got 3, 30 lb'rs last week.

I shot a pig this morning and it was in my cooler skinned, gutted and cut in half within 39 minutes. I think it is going to be real good.

You are saying it only took you 9 min to do the work? It took me 5 minutes to get to the house and 34 minutes to skin, gut, saw in half, wash and put in the cooler. I was taught to cut the throat and let bleed as soon as possible. I don't know about you but I am not afraid to approach a dead 50 pound pig.
