Pack cucumbers in jars with fresh dill, a jalapeno, and a clove of garlic. Make a brine of two pints water, one pint vinegar, and 1/3 to 1/2 cup salt. Bring brine to boil and pour over the cucumbers. Leave on the counter until the color changes, then refrigerate.

I put up a batch of spears and a batch of slices in plastic coffee cans.

Dill Pickles

1 ea. Cup Distilled White Vinegar
3 ea. Cups Distilled Water (Room Temp)
1 ea. Tblsp. Sugar
4 ea. Tblsp. Canning Salt *
2 ea. Cloves Garlic per Jar Finely Chopped **
3 or 4 ea. Dried Red Long Chili Peppers per jar/to taste/for decoration. Add Serrano peppers if you like your pickles a bit on the 'hot' side.
2 or 3 ea. Dill Weed Sprigs per jar (Good luck finding/affording or growing this!)

Mix 1st 4 ingredients, allowing sugar, & salt to disolve.
Lay clean jar on it's side initially. Place the dill in lengthwise, add 1 pepper, & toss 1 chopped garlic clove into the bottom of jar. Slice cucumbers into spears of desired size. Stuff jar as full as possible, then stand. Wriggle spears around & push more in to insure a tight pack. Poke other two peppers in opposite sides so that they are visible. Fill with liquid mixture, then top with remaining chopped clove of garlic. Screw lid on tightly.
Put sealed jars into a room temperature, dark cabinet for minimum of 24 hrs. Chill & serve! You can let them 'age' longer if you want stronger flavor from spices, inverting occasionally to help 'blend' flavors.

* You must use Canning Salt only! You have to buy the 4 lb. box, but it's only $1.00, and it will last you for yrs!
** If you want a stronger garlic flavor, you can use a garlic press, but your jar of pickles will look like a 'Snow Globe' with all the 'flakes' floating around.

How many days does it usually take to change colors?

Bill, do you let the brine cool before you pour it over the cucumbers or jalapeņos? Sorry if it's a rookie question, but I are a rookie.

I do not let it cool.

I keep my pickles and jalapeņos in the refrigerator. They'll keep for at least a year. I do the same with store bought.
