I am taking some pork to the processor today to have sausage made. Other than pan sausage, what say you as for as the best mix of beef or other products?

Add a store bought pork butt,and a chuck roast to 8 pounds of wild pork.

I assume wild pork?

We have made sausage with all feral pork with jap and cheese for bbq'ing IF the ferals have enough fat on them, most of the time they don't so we will add a little beef/beef fat.

Thanks guys for the suggestions. Yes it is a feral hog and I think there is enough fat on it.
Any other thoughts?

I love just about any kind of sausage, whether link or patty. Bratwurst, kielbasa and sweet or hot Italian being some of my top choices.

Smoked Kielbasa is my favorite. But sometimes I add some fennel to go a little italian.

for you sausage lovers, in case ya'll haven't tried it, take pretty much any kind of sausage and make into patties like a hamburger, cook it on your smoker/pit ... thank me later.

I got invited to a BBQ in Mass-a-two-sh!ts about 25 years ago ... their version of BBQing was hamburgers on a grill ... when I walked up to get my burger, the cook asked "hamburga' or sausage?" I was like WTHeck, sausage! It was hot Italian cooked over charcoal/hardwood ... OMGoodness it was to die for. So, every time I cook hamburgers now, I cook half beef hamburger and half sausage (breakfast, Italian, etc.).
