This is a dish I've made a couple times now and everyone seems to really like it. It was inspired by a side dish called "Zucchini Perini" that is made at a local restaurant "Perini Ranch Steakhouse". It's basically a venison ragu with a lot of vegetables.

2-3 Garlic cloves
2 Bell peppers (red and yellow)
1 Onion
8-10 Mushrooms
2-3 Zucchini
1lb Ground venison or beef
1lb ground venison breakfast sausage

SAUCE

1 tablespoon tomato paste
A 28-ounce can crushed tomatoes
1/2 cup red or white wine
2 tablespoons chopped fresh oregano or basil or parsley
1/2 teaspoon red pepper flakes
A pinch of sugar
Salt to taste


Brown your venison first and set aside. Heat a couple tablespoons of olive oil in a large pan. Add garlic then the rest if veggies. Once the veggies start to soften add your sauce ingredients. Add in venison a let simmer for 5 minutes or so. Serve over pasta and top with Parmesan
