It was too nice of a day not to grill outside again today. I grilled venison backstrap and some chicken breast.







Every time I eat grilled backstrap I say to myself "damn, I need to shoot more deer next year."

I like to cut the backstraps in about a 4"-6" chunk.
I then marinate them in extra virgin olive oil for at least 4 hours.
Pull em out and season with garlic,sea salt,and fresh ground black pepper.
Sear them real good over a hot fire, and try not to cook them past medium rare.

Looks good amigo. My wife is convinced that venison has to be cooked to well done for it to be safe, so all of ours become ground or chili meat. Your making me wish I had some straps in the freezer

I also smoked some meat for my wife and daughters this past weekend. This was half cooked. Took advantage of the Boston Pork Shoulder sale at HEB.
