I have a chance to buy a new unit for a really good deal, does anyone here have any experience with them?

Yes the system is well covered here and elsewhere - Was a former military weapon system so from a functionality standpoint they should be good to go.
Warranty is questionable since they are also discontinued, i.e. there is probably (maybe) one vendor that might be working on systems with issues.
The money your saving on the really good deal would be helpful in buying protein bars to lug the system around - it is probably one of the heaviest on the market at 3+ pounds

By good deal, do you mean for $1000?
In 2005, these were cutting edge military gear costing something like $25-30K. Today you can find them offered usually for $5-7K. These are "new" in the sense that the components may have been unused, but most of the components are years old already even if assembled in 2015.
It is a very functional scope. You can find all sorts of vids for it on Youtube. For the same money, you can get a 640 resolution (4 times greater) that is half the size and 2/3 the weight that will do you a much better job. These are big, heavy scopes, though they are easy to operate.

3-5K I think I'm really leaning toward night vision just because I already have a pvs-14 and am more familiar with nv.

Nothing makes that PVS14 shine like a thermal spotter!
I had cutting edge Military NVGs and walked past a pig one night. Thermal picked it up a MILE away. Use both!!

3-5K I think I'm really leaning toward night vision just because I already have a pvs-14 and am more familiar with nv. You'll miss a lot with NV that you would otherwise see with thermal. Thermal is the biggest game changer out there. It is worth saving and waiting for. Plus...you can use thermal both night and day. I have spotted deer in tree lines during the day with thermal when I would not have otherwise seen them. At night, animals stand out much better with thermal than NV...no doubt... Edit: ...and at 5K you are definitely already in the game for a decent thermal scope.

If you already have a PVS-14 theres no reason to buy more NV. You need thermal. For your range look hard at the IR Patrol / hunter line for IR Defense. That said for a spotter the Pulsar Quantum line is outstanding for the money. They are also coming out with a scope called the Apex. It'll be real hard to beat for the money (about 3K). The IR Defense line is going to be 4500-6500ish.

With thermal you'll be shocked when you see how many critters you miss when just using NV.
